I actually have 2 trees full of Apricots. I'm very excited about this. I love the looks of your jam from last year and want to make mine to look like that. I have made strawberry jam...the jury's still out. I haven't ever added butter but I'll do whatever will give me a beautiful jar of Jam. They will be given as gifts..Can you email me the recipe that you use and which pectin did you find to be the most successful brand. I have access to whatever I need. I also wondered if your apricots are dense in texture and a bit sour. They are a pretty color and starting to drop off the trees. They aren't soft but firm. I bit into it and it separates from the pit easily. Are they ripe for the cooking? I would appreciate any help you can give me.
