Mondays with Maida - Mountain Honey Gingersnaps

I was a little disappointed in these cookies. For some reason, between the description given in the book and the list of ingredients, I had high expectations. I was hoping for a crunchier cookie, but the two I had weren't especially so (someone else said the one they had was, so the batches may have come out differently). Everyone at work seemed to like them OK, but nobody was gushing. I thought they were altogether ordinary.



In addition to ginger, these cookies are spiced with cinnamon and cloves. There's not a tremendous amount of ginger, so they don't have the punch you might expect from something called a gingersnap. The instructions said to bake them from 13 to 15 minutes, but I had them in the oven about 10 or 11 minutes. That may well have been my problem. Based on their color I assumed they were done, but I expect the additional time was necessary to achieve the crunchiness they are supposed to have.

If there weren't so many other cookies I like better (not to mention all the others yet to try) I'd say these were worth another try. If I did make them again, I would try leaving them in a little longer. If you're fond of spice cookies but prefer them on the milder side, you might be very happy with these.

hi cathy--could the honey have kept them from being crunchy as well?

That's too bad Cathy, they sound nice! Cloves, ginger... Ah well - guess sometimes it's good we don't like EVERYTHING we make, there'd be too much you'd have to re-visit again and again...

Well...this will just make you enjoy the great cookies all the more. Maybe you should mark that page in your book with a frownie (sp?) face :( Or an indifferent face :|

Hi Santos - I expect it didn't help (you must have the book!) There's a note in the book that says these can go soft if not stored properly, so it sounds as though they're prone to do that and the honey may be the culprit there (although humidity is hardly a problem around here right now!)

Hi Zarah - true, true... as with the chocolate cookies, there are so many variations on spice cookies just in this section of the book, that I'm sure there will be at least one that I will want to make again.

Hi Alice - now there's an idea...cookbook emoticons! I just made next week's cookies tonight and they were better!

Honey is hydroscopic which is why your cookies turned out softer.

Hi Susan! But the original recipe calls for honey and the notes with the recipe describe the cookies as crisp, crunchy, and chewy.

Hi Cathy. I made these cookies once and they were rather delicious. Maybe the problem was your cookies were too big. If they go soft, just pop them in a hot oven until they crisp up again.
